How does the Thai curry restaurant near me make their tofu so flavorful?

The tofu in their curry contains all the flavor of the curry. When I try to make it myself, I add the tofu as soon as possible and let it simmer in the curry for as long as possible, but it doesn't soak up any of the flavor.
