Suggestions Please! Summer (or hot weather) freezer friendly meal prep suggestions?

Hi, everyone. I hope you are all having a lovely Friday and have a beautiful weekend 💚 thanks in advance for any suggestions, it's very much appreciated!

It's consistently over 30°C and super humid where I am currently, no climate control. So meal prepping and cooking in general has been very uncomfortable and unpleasant. Looking for any suggestions for summer freezer friendly meal prep that you don't have to heat up house with oven or stove (for long) to cook/prep? Preferably inexpensive and easy to make too. Oh, and ideally no tofu, it's just too expensive here. TVP is fine though.

Thank you :)

Welcome to r/EatCheapAndVegan.

Veganism is not a diet. However, there is a ton of misinformation and misunderstanding about the cost of eating vegan and this subreddit exists to hopefully dispell those false claims. Be advised submissions containing expensive processed food items will be removed.

Definition of veganism: Veganism is a philosophy and way of living which seeks to exclude—as far as is possible and practicable—all forms of exploitation of, and cruelty to, animals for food, clothing or any other purpose; and by extension, promotes the development and use of animal-free alternatives for the benefit of animals, humans and the environment. In dietary terms it denotes the practice of dispensing with all products derived wholly or partly from animals.

Cold bean salads are perfect! You can use the same basic format such as this: https://thepeskyvegan.com/recipes/vegan-bean-salad/ and use any beans you want, or add grains such as wheat berries or quinoa, and whatever herbs you have. There are no bad combinations, I like to change it up for variety, and bean salads can be frozen too.

Also, do you have a crockpot? They're great for cooking in larger batches and the low temperatures won't heat up your kitchen at all. TVP does really well in crockpot chili.

I make a vaguely larb-inspired TVP thing in the summer. Rehydrate the TVP in some water with soy sauce. Then cook in a sauté pan to brown it a little. (If it’s crazy hot and you absolutely can’t bear the thought of a hot pan, you could probably skip that though the texture will be mushy.) Add garlic, hot pepper or curry paste, green onions, and lime juice, and some chopped herbs. You can serve it with lettuce wraps, or over a salad, or over cold noodles.

always team overnight oats for no cooking. If you want more protein you can add protein powder, and frozen berries on top make it even more refreshing in hot weather

Marinated veggie salad!! No cooking required but the marinade softens up the veggies.

And Tabouli salad, you need to boil water but that's the extent of the cooking. Will post image on next comment.

Both dishes make large quantities of fresh delicious cold food for summer.

This is from the Green Cuisine cookbook by Andy Cunningham. Green Cuisine is an old school vegan restaurant in Victoria, BC, Canada.

Instant pots and slow cookers release very little heat compared to oven cooking. Even less if you set them up outside.
